It is now week 8 of the school term. Time has flown by with the logistics of 4 children, packed school calendars, homework and after school activities, and there are days when I run out of steam and we are only half way through the term.  My beginning of term resolutions are waning fast, and as much as I love cooking in the kitchen, I need inspiration by week 8.  It seems I am always in a supermarket or organic shops having run out of items for school lunch boxes and the children’s dinner.  Also, with 4 children, it has also become very expensive.

I decided to try out Hello Chef! for a week, to put a little zest and fun back into cooking for the family because there are days when I run out of headspace and my children are also bored by the usual receipes.  Often, I also find when I am finally inspired by my large volumes of cookbooks to try new receipes, my enthusiasm then goes unrewarded as my key ingredient is not available typically in supermarkets here, and it could be something as common as organic eggs or chicken even though re-stocking at supermarkets has improved dramatically over the last 8 years.  Hello Chef! has also saved me a week’s worth of painful supermarket shopping.

Hello Chef!

Hello Chef! is the creation of Olivia Manner, who is half Finnish and half French, and is herself a mum of two young children. She felt she had to give up her day job to find a new lifestyle that suited her family, and her passion was born.  Olivia has a university degree in Hospitality Management from Finland which has given her a strong foundation to support the concept, whilst her French mother has given her memories and passion of family dinners that she hopes to re-create in more homes in Dubai and the rest of the UAE.

How it works?

Olivia and her team create new recipes every week, you can go online and choose the size pack that suits your family on www.hellochef.me and your ingredients and easy recipe instructions are delivered to your front door for free.  Meals start at roughly AED35 a meal making it very economic too.

Who’s cooking now?

Most of the time I am rushing through dinner preparations having rushed around all afternoon covering children’s activities, and when we all get home I don’t always have the patience required to start cooking with children around 4.30pm.  With Hello Chef! everything is delivered to our home in packages of Day 1 – Day 5 which are all clearly labelled, it has saved me sufficient time and patience to ask my oldest two children to cook with me.  The truth is that my children love being in the kitchen cooking with me – my eldest boy tells me that is his favourite thing to do with me.  It makes me really happy to spend this time with them. The recipes are simple enough that the children can read it themselves; and my 7 and 5 year-old are happy peeling potatoes, preparing the salmon and trying new recipes that work.

One of the dishes delivered home was chicken and broccoli pasta, and broccoli being one of my 5 year-old’s worst nightmare I was a little nervous but I made sure that was a meal she alone prepared  it for her 3 brothers with a little help from me.  The difference was she was so proud that she cooked it that she ate it (without the broccoli, of course) but even if there were tiny florets floating around she would happily eat it.   I know if I had just laid out the already cooked meal in front of her at dinner time, she would have refused to eat any of it. She has since requested the dish again.

Leftovers can also be used for the children’s lunchbox at school the next day.

Dinners for friends

I rarely host dinner parties these days.  After a 6am start everyday, I am often too tired to prepare dinner for anyone.  We might go out but rarely host.  With Hello Chef! I am probably more willing to invite just 2 or 3 friends round for a casual dinner London style.  Imagine coming home, and finding all your ingredients on your doorstep.  That is indeed becoming a luxury in my view.

Educational

I have always believed that despite the privileged help we receive at home, it is always important that children see their parents cooking. Also, I want them to understand the importance of preparing dishes from scratch, not out of jars and bottles.  I know that is not always possible with our busy schedules so we cook and freeze a lot in batches to save time.  Hello Chef! helps us to prepare fresh food that day.

I know my family loved it, and we will definitely be using Hello Chef! again especially for our super busy weeks.

10-minutes with Hacker’s Senior Interior Designer Leigh-Ann Steele | How to upgrade your kitchen on a budget

We are currently living most of this summer without a kitchen, and it has not been easy with young children, and thank goodness the team at Hacker and Roseville have tried to make it as painless as possible but I am hoping that when school starts, it will be finally done. 

At some point, we will all face wear and tear from heavy usage of our family kitchens and some will need a temporary or permanent facelift. It is always so satisfying when renovations are finally complete no matter the scale of the project but it is also a big commitment especially if you are on a tight budget, short of time or have young children and not everyone is up for dramatic changes.  

So if you need ideas to make worthwhile cosmetic changes to the kitchen without ripping the whole room out, I sat down with Leigh-Ann Steele, Senior Designer, from Hacker Dubai to ask her advice on affordable tips on making effective changes.

 Change the worktops

There are lots of different materials that you can use for worktops. They each have pros and cons and varying price ranges.

Laminate- The most cost effective material and quite readily available locally. There are some really nice new laminates available that have textures & funky colours. They aren’t as cold to the touch as marble granite or quartz material. They are easily installed by a skilled kitchen fitter too. The drawback is that they never look like a natural stone or quartz material.

Marble & granite – These are natural materials and come in many colours with unusual textures and veining which are different in each slab. This is the beauty of using natural stone. You can visit a stone yard and choose the exact slab for fabrication. The fabricator can do varied thicknesses by mitring the edge to make it appear that the stone is thicker than the slabs actually is. The can also do under mount sink cut-outs with polished edges all round. If you have an under mount sink with drainer grooves cut into the stone you give the illusion of more counter space as there is no need for a large sit on sink with an attached drainer.

Quartz– this looks and feels like a stone worktop but it’s a manmade material. There are many different manufacturers of quarts material. They are not all made of the same quality though. Be sure to go with a reputable supplier of the stone and a really good fabricator who cuts worktops regularly, or you may be disappointed! A well-produced quarts will not stain as it is completely non porous. Even if you were to leave turmeric on it overnight, as long as you scrub hard enough it will come out. Be sure not to use anything acidic though as this could harm the surface. It comes in lots of different colours that you wouldn’t find in natural stone slabs. As well as solid colours. Solid white is very popular at the moment as is anything in more neutral colours- cool greys, taupe & light brown. It also comes in a volcano finish which is a roughened texture to see and touch but still very practical in a kitchen. Suede finishes are also popular as they have a matt appearance   The fabricators of quartz material can do all of the things listed above with regard to the sink cut-outs and overall worktop thickness.

Wooden worktops– These are not that popular in the UAE as they are a natural material which is susceptible to climate changes. If the AC is switched off in the warmer months they can begin to warp. Water and heat damage are the most common problems. If you were to leave a glass with a rim on the surface overnight you would more than most likely see a permanent ring on the top as it will have penetrated the surface. They are not suitable for wet sink areas for the same reason. A hot plate or bowl will also mark the tops quite easily. The tops will need to be oiled every few months to keep them in tip top condition.  So although beautiful the maintenance and day to day use can be tiresome. 

Change the splashbacks

Natural stone or quartz- if you are replacing your worktops you may want to consider having the splashbacks done in the same material. The beauty of a single piece of stone is that you won’t have grimy grout joints appear over time in cooking and wet areas. The cost is going to be substantially more than a mid-range tile would cost.

Glass- you can have a glass back painted splash back. Again you will need to find a really good company as a template needs to be done. Cut-outs for plugs etc.. once this is done the glass needs to be toughened for safety reasons. After this it is painted and has a film applied. The supplier will then come and install the glass onto your wall with a silicone adhesive. The drawback of this is that if the glass is even a few millimetres out it cannot be re cut. Once the panel is toughened that’s it. You can’t change it or cut it anymore. Be sure to check that the paint work is perfect before they install. Again as it is behind the glass there is nothing you can do to touch up badly finished areas or rectify bubbles etc…  

Tiles- there are so many trendy new tile shapes and finishes available from Hexagonal marble to slithers of natural stone. Of course the cost range on these can vary greatly. If you didn’t want to break the bank there are options which are reasonably priced and can easily be installed by a contactor. The downside is of ours the grout lines. These may get dirty over time in your cooking and sink areas especially. Make sure the contractor who installs uses a waterproof grout.

Change the flooring

Some properties in Dubai are looking a little tired especially the flooring- there is a great product called LVT which is perfect for use in a kitchen. It has the appearance of a very realistic wooden floor. It is only 6mm thick so can be applied directly over your existing tiles. The surface is waterproof making it the ideal choice for a kitchen area and running it through the rest of the villa or apartment. This will also give the illusion of the space being a lot larger with eh same finish. The installation is fast and clean. No need to lift the existing flooring.

A resin or concrete floor can be applied over your existing tiles in a number of colours. This is a very thin layer in a multitude of colours giving you a more industrial look throughout. Again it is quick and won’t require you to lift the existing tiles which is a very messy job!

 Change the lighting

Bad lighting is one of the most common issues in a kitchen. It can make everything look dull and unappealing.  Changing the ceiling from those awful tiles to a freshly painted flush plasterer board finish could be just the answer. You can get warm coloured lighting which can be movable ( I call them rock and roll lights). You can angle the lights to highlight the features. For instance if you have a funky piece of art or furniture in your kitchen. Make it a feature. Under cabinet lights make a huge difference as they bring a different light source into the mix. You can switch them separately for mood lighting when the kitchen isn’t being used to cook or do anything that requires full task lighting. 

Re-decoration & internals

Clean freshly painted walls in neutral colours are always good. If you wanted to do something a little different there are lots of paint effects offered by Jotun that can transform a wall into a feature wall and really make it stand out. From a texture brick finish to something that appears as a hessian look and feel. These won’t break the bank.

If you use wall paper in a kitchen make sure that it is suitable for areas with a high moisture content. Try not to put these anywhere near the coking or washing up stations. Wall paper and water or  steam don’t mix.

You can change your knobs or handles on the kitchen doors. Just be sure that you line up the holes. There are handles available that have a flat back plate and would cover any existing holes from with a single knob or handle with 2 screw holes.

Clever storage solutions inside the cabinets-re organise your cabinets internally with baskets and additional shelves- plan in advance what you’re going to store in each cabinet and crate spaces for items to fit in.  

Replace the sink  and tap. By replacing an old dull sink and tap you can make the entire space feel clean and more user friendly.

Calin a steam cleaning company to give your existing cabinets a good once over. They will come back to life and feel fresh. Even if they aren’t brand new! They can also steam clean the appliances. Your oven will look & feel brand new!

The Residence Maldives | Spa by Clarins

The SPA by Clarins is exclusive to The Residence Maldives.  It is the first and only Spa by Clarins in the Maldives and offers an array of holistic treatments, pampering massages and hair services.

The spa was a 5 minute walk from our room, located on the quiet side of the island out on its own pier. All the treatment rooms have sea-facing views. The therapists are experienced and professional, and often from Thailand or Indonesia – best countries for massages in my opinion.  It was our one hour escape from the children, and that made it feel even more like a sanctuary.

It was a soothing 50-minute massage, in a tranquil couples room with a priceless view.  My husband and I tried to stay awake during the massage to savour every moment but the soothing body rub lulled us both off at some point to sleep.  A lovely variety of oils to relax or to boost energy – we must have chosen the sleepy kind.  We woke up refreshed and ready to deal with the 4 children. The massage was so revitalising that we sneaked in on another day   when the children had an hour or so at the kids club after a 4am start for fishing.

We would love to have extended our time at the spa to 90 minutes to enjoy the views longer and try other treatments but duty called.  The Maldives isn’t a place I would normally recommend a massage.  Often, they are overpriced but The Residence Maldives charges just over USD120 for a 50-minute full body massage which makes it more reasonable than most five-star hotels in Dubai.  It is worth booking it upon landing to massage away all journey stress to start the holiday a little more relaxed.

The Residence Maldives by Cenizaro | Dining Options

The Residence Maldives is run by Cenizaro, a Singapore based company, and that made me curious as to what the daily menu at the resort would be composed of.  I was thrilled to know that the head chef is from Indonesia with much experience in Asian and Western cooking.  Then, the next concern was if the children would like the menu  – every parent’s worry.  My children are not fussy eaters in general but out of 4 children, one is bound to disagree with something the others like.  For more about their special offers see below.

Asian Delights

When I discovered Pad Thai, Mee Goreng, Hainanese Chicken Rice, Nasi Goreng, Char Siu Wonton Noodles, on the menu I was delighted, and even more delighted that the authentic tasting dishes were prepared well.  The pool side restaurant where we ate at almost everyday served all the mentioned Asian delights as well as good quality pizzas, burgers, pastas, and sandwiches.  One of my husband’s favourite request in the Maldives is Spaghetti Alio, Olio e Pepperoncino using the extremely hot Maldivian chilli.  This was made to perfection.  If you are into spicy food do ask to try the flavoursome Maldivian chilli, perfect with Pad Thai and Mee Goreng but heed my warning – they are very spicy!

Breakfast & Dinner

Breakfast and dinner is usually served in the open-aired main dining room.  Breakfast has a wide variety of options from deli meats, pancakes, chinese porridge, pastries, yoghurts, fresh honey comb, sushi and so forth.  Perhaps the only missing thing was more organic options but the children loved every meal regardless and lapped up   their food at meal times. Dinner is an a la carte menu with different curries varying from Maldivian to Thai or pasta with crab as well as vegetarian options.  On occasion when we chose in-villa dining, the food was also of excellent quality, and we were excited for meal times.

Formal Dining at Fulhumaa Restaurant

For formal dining options, the hotel has its signature Fulhumaa  Restaurant nesting itself on a pier where you can hear the lapping of the waves over the reef, and guests dine under the stars on a clear night hoping for no evening showers.  The dishes are thoughtfully creative in line with any fine dining restaurant and we tried the tenderised pork dish and the tasty wagyu beef served on a bed of Himalayan salt cooked to choice.

The Residence Maldives also caters for other dining options but we didn’t have time to try it all including a dinner at the Sunset Grill, a private dining option, and a picnic on a deserted island.

Fishing

Our deep sea fishing expedition led my son, Lorenzo, to catch a large local fish called the Wa Hu, and can be described to be from the same family as the Barracuda.  The kitchens then prepared the fish in a variety of ways including sashimi, Thai curry and grilled.
