Seashellsonthepalm has had a long working relationship with Koita because as a family we believe that Koita is trying to do something good.  It is an organically grown Dubai business although the key component to their successful enterprise, the cows,  live in Italy, a country with decades if not hundreds of years of experience in dairy farming.  I have always felt it important to educate families about certain choices, and to get the right information out there.

Online Delivery – new launch

Milk is one of the heaviest and bulkiest items on my grocery shopping list. With a family of 6, I will buy on average between 4 – 6 1L packs a week.  The milk is usually used for cereal, teas, cappuccinos, mash potato, pancakes etc.  Koita now delivers a wide range of milk making it easier for the weekly grocery shopping in terms of volume and weight.  The new online service will deliver cases of 12x 1L or 24x 200 ml from Lactose Free (non-organic), Skim Milk (organic) to Full Fat Milk(organic), as well as providing non-dairy solutions like Non-GMO Soy Milk (non-ogranic).  For more information about their free delivery service check out the link.  Koita Delivers.

Organic – what does it mean?

Organic milk means no added hormones, antibiotics, pesticides or preservatives. This means a lot to me as a mum to know my children are not being exposed to unnecessary toxins in their developing bodies.  I know it is always not possible to control what my children eat but I have an 80/20 approach to it all, and if I can remove certain chemicals from their daily intake I will certainly try.  Koita cows live in northern Italy and are fed on grass grown in volcanic soil.  The Koita Organic Milk range includes full fat, low fat, skim milk and for the occasional treat chocolate milk.  We usually buy the low fat or skim milk which are family favourites.  The organic chocolate milk we might keep in the fridge for the occasional ‘treat day’  – it makes a quick hot chocolate on a chilly Dubai day or you can freeze them in lolly containers to turn them into organic chocolate ice-creams on a warm summer’s day.

Lactose Free  – New launch

Due to popular demand because of a high number of lactose intolerant people from the Middle East, Koita has now created the first lactose free milk in the market that is free from added hormones, antibiotics, pesticides and preservatives, which is still produced in Italy.  The milk is created by adding a natural enzyme lactase to the milk to break down the lactose milk sugar into more easily digestible sugars, enabling people who are lactose-intolerant the ability take milk into their diet.  The Lactose Free milk is not organic but remains free of unnecessary chemicals and toxins, but cannot be declared organic only due to the feed of the cows.

Non-Dairy Soy Milk – New launch

Soy lattes and cappacinnos have always been popular, and for those who prefer not to have dairy in their diet can use the Koita Soy Milk which is an ideal substitute.  The milk is not organic but the soy has been created from non-GMO soy.  Non-GMO means non-genetically modified organisms that have been created in a laboratory using genetic modifications/engineering techniques.  Scientists, and many other groups including consumer groups have cited many health and environmental risks to consume foods containing GMOs.

10-minutes with Hacker’s Senior Interior Designer Leigh-Ann Steele | How to upgrade your kitchen on a budget

We are currently living most of this summer without a kitchen, and it has not been easy with young children, and thank goodness the team at Hacker and Roseville have tried to make it as painless as possible but I am hoping that when school starts, it will be finally done.

At some point, we will all face wear and tear from heavy usage of our family kitchens and some will need a temporary or permanent facelift. It is always so satisfying when renovations are finally complete no matter the scale of the project but it is also a big commitment especially if you are on a tight budget, short of time or have young children and not everyone is up for dramatic changes.

So if you need ideas to make worthwhile cosmetic changes to the kitchen without ripping the whole room out, I sat down with Leigh-Ann Steele, Senior Designer, from Hacker Dubai to ask her advice on affordable tips on making effective changes.

 Change the worktops

There are lots of different materials that you can use for worktops. They each have pros and cons and varying price ranges.

Laminate- The most cost effective material and quite readily available locally. There are some really nice new laminates available that have textures & funky colours. They aren’t as cold to the touch as marble granite or quartz material. They are easily installed by a skilled kitchen fitter too. The drawback is that they never look like a natural stone or quartz material.

Marble & granite – These are natural materials and come in many colours with unusual textures and veining which are different in each slab. This is the beauty of using natural stone. You can visit a stone yard and choose the exact slab for fabrication. The fabricator can do varied thicknesses by mitring the edge to make it appear that the stone is thicker than the slabs actually is. The can also do under mount sink cut-outs with polished edges all round. If you have an under mount sink with drainer grooves cut into the stone you give the illusion of more counter space as there is no need for a large sit on sink with an attached drainer.

Quartz– this looks and feels like a stone worktop but it’s a manmade material. There are many different manufacturers of quarts material. They are not all made of the same quality though. Be sure to go with a reputable supplier of the stone and a really good fabricator who cuts worktops regularly, or you may be disappointed! A well-produced quarts will not stain as it is completely non porous. Even if you were to leave turmeric on it overnight, as long as you scrub hard enough it will come out. Be sure not to use anything acidic though as this could harm the surface. It comes in lots of different colours that you wouldn’t find in natural stone slabs. As well as solid colours. Solid white is very popular at the moment as is anything in more neutral colours- cool greys, taupe & light brown. It also comes in a volcano finish which is a roughened texture to see and touch but still very practical in a kitchen. Suede finishes are also popular as they have a matt appearance   The fabricators of quartz material can do all of the things listed above with regard to the sink cut-outs and overall worktop thickness.

Wooden worktops– These are not that popular in the UAE as they are a natural material which is susceptible to climate changes. If the AC is switched off in the warmer months they can begin to warp. Water and heat damage are the most common problems. If you were to leave a glass with a rim on the surface overnight you would more than most likely see a permanent ring on the top as it will have penetrated the surface. They are not suitable for wet sink areas for the same reason. A hot plate or bowl will also mark the tops quite easily. The tops will need to be oiled every few months to keep them in tip top condition.  So although beautiful the maintenance and day to day use can be tiresome.

Change the splashbacks

Natural stone or quartz- if you are replacing your worktops you may want to consider having the splashbacks done in the same material. The beauty of a single piece of stone is that you won’t have grimy grout joints appear over time in cooking and wet areas. The cost is going to be substantially more than a mid-range tile would cost.

Glass- you can have a glass back painted splash back. Again you will need to find a really good company as a template needs to be done. Cut-outs for plugs etc.. once this is done the glass needs to be toughened for safety reasons. After this it is painted and has a film applied. The supplier will then come and install the glass onto your wall with a silicone adhesive. The drawback of this is that if the glass is even a few millimetres out it cannot be re cut. Once the panel is toughened that’s it. You can’t change it or cut it anymore. Be sure to check that the paint work is perfect before they install. Again as it is behind the glass there is nothing you can do to touch up badly finished areas or rectify bubbles etc…

Tiles- there are so many trendy new tile shapes and finishes available from Hexagonal marble to slithers of natural stone. Of course the cost range on these can vary greatly. If you didn’t want to break the bank there are options which are reasonably priced and can easily be installed by a contactor. The downside is of ours the grout lines. These may get dirty over time in your cooking and sink areas especially. Make sure the contractor who installs uses a waterproof grout.

Change the flooring

Some properties in Dubai are looking a little tired especially the flooring- there is a great product called LVT which is perfect for use in a kitchen. It has the appearance of a very realistic wooden floor. It is only 6mm thick so can be applied directly over your existing tiles. The surface is waterproof making it the ideal choice for a kitchen area and running it through the rest of the villa or apartment. This will also give the illusion of the space being a lot larger with eh same finish. The installation is fast and clean. No need to lift the existing flooring.

A resin or concrete floor can be applied over your existing tiles in a number of colours. This is a very thin layer in a multitude of colours giving you a more industrial look throughout. Again it is quick and won’t require you to lift the existing tiles which is a very messy job!

 Change the lighting

Bad lighting is one of the most common issues in a kitchen. It can make everything look dull and unappealing.  Changing the ceiling from those awful tiles to a freshly painted flush plasterer board finish could be just the answer. You can get warm coloured lighting which can be movable ( I call them rock and roll lights). You can angle the lights to highlight the features. For instance if you have a funky piece of art or furniture in your kitchen. Make it a feature. Under cabinet lights make a huge difference as they bring a different light source into the mix. You can switch them separately for mood lighting when the kitchen isn’t being used to cook or do anything that requires full task lighting.

Re-decoration & internals

Clean freshly painted walls in neutral colours are always good. If you wanted to do something a little different there are lots of paint effects offered by Jotun that can transform a wall into a feature wall and really make it stand out. From a texture brick finish to something that appears as a hessian look and feel. These won’t break the bank.

If you use wall paper in a kitchen make sure that it is suitable for areas with a high moisture content. Try not to put these anywhere near the coking or washing up stations. Wall paper and water or  steam don’t mix.

You can change your knobs or handles on the kitchen doors. Just be sure that you line up the holes. There are handles available that have a flat back plate and would cover any existing holes from with a single knob or handle with 2 screw holes.

Clever storage solutions inside the cabinets-re organise your cabinets internally with baskets and additional shelves- plan in advance what you’re going to store in each cabinet and crate spaces for items to fit in.

Replace the sink  and tap. By replacing an old dull sink and tap you can make the entire space feel clean and more user friendly.

Calin a steam cleaning company to give your existing cabinets a good once over. They will come back to life and feel fresh. Even if they aren’t brand new! They can also steam clean the appliances. Your oven will look & feel brand new!

The Residence Maldives by Cenizaro | Dining Options

The Residence Maldives is run by Cenizaro, a Singapore based company, and that made me curious as to what the daily menu at the resort would be composed of.  I was thrilled to know that the head chef is from Indonesia with much experience in Asian and Western cooking.  Then, the next concern was if the children would like the menu  – every parent’s worry.  My children are not fussy eaters in general but out of 4 children, one is bound to disagree with something the others like.  For more about their special offers see below.

Asian Delights

When I discovered Pad Thai, Mee Goreng, Hainanese Chicken Rice, Nasi Goreng, Char Siu Wonton Noodles, on the menu I was delighted, and even more delighted that the authentic tasting dishes were prepared well.  The pool side restaurant where we ate at almost everyday served all the mentioned Asian delights as well as good quality pizzas, burgers, pastas, and sandwiches.  One of my husband’s favourite request in the Maldives is Spaghetti Alio, Olio e Pepperoncino using the extremely hot Maldivian chilli.  This was made to perfection.  If you are into spicy food do ask to try the flavoursome Maldivian chilli, perfect with Pad Thai and Mee Goreng but heed my warning – they are very spicy!

Breakfast & Dinner

Breakfast and dinner is usually served in the open-aired main dining room.  Breakfast has a wide variety of options from deli meats, pancakes, chinese porridge, pastries, yoghurts, fresh honey comb, sushi and so forth.  Perhaps the only missing thing was more organic options but the children loved every meal regardless and lapped up   their food at meal times. Dinner is an a la carte menu with different curries varying from Maldivian to Thai or pasta with crab as well as vegetarian options.  On occasion when we chose in-villa dining, the food was also of excellent quality, and we were excited for meal times.

Formal Dining at Fulhumaa Restaurant

For formal dining options, the hotel has its signature Fulhumaa  Restaurant nesting itself on a pier where you can hear the lapping of the waves over the reef, and guests dine under the stars on a clear night hoping for no evening showers.  The dishes are thoughtfully creative in line with any fine dining restaurant and we tried the tenderised pork dish and the tasty wagyu beef served on a bed of Himalayan salt cooked to choice.

The Residence Maldives also caters for other dining options but we didn’t have time to try it all including a dinner at the Sunset Grill, a private dining option, and a picnic on a deserted island.

Fishing

Our deep sea fishing expedition led my son, Lorenzo, to catch a large local fish called the Wa Hu, and can be described to be from the same family as the Barracuda.  The kitchens then prepared the fish in a variety of ways including sashimi, Thai curry and grilled.

The Residence Maldives | Days in Paradise | Affordable Five-Star luxury | A family review

The Maldives has always been on most travellers bucket list, and it is sometimes a struggle for parents who still delight in travelling to know what to do with young children on an enclosed island and some parents are intimidated at the prospect.  The Residence Maldives is different – it gives the children a sense of adventure and fun alongside experienced staff and warm hospitality.  It is located on Falhumaafushi, an island located on one of the largest atolls in the world.  We stayed at the property for 5 days, and by the end of it we wanted to extend our stay. We will definitely be returning to this property next year when the resort expands to a second island connected by a bridge making it one of the largest hotel in the Maldives with a further 173 villas.  There is much to do every day from diving to paddle boarding, to lazing around by the pool, to long luxurious massages.  It is a long time since my family has felt this well rested.  Also check out the special summer offer below, and Seashellsonthepalm’s special offer for readers.

The Hotel

The hotel is owned by the Cenizaro Group, a Singapore based company, and headed up by Gary Xie, a second generation hotelier, who was recently featured alongside his wife, Beverly Chin, in the most recent issue of Singapore’s Tatler Magazine.  With a Singaporean at the helm  of the company, I knew there would be some guaranteed standards including efficiency on the island as well as good food.  More on our food experience…

We took the morning 4-hour flight from Dubai to Male.  Our arrival to Male was easy enough, as we waited two hours in the lounge before taking a 1 hour flight to the closest island.  The children were exhausted after the travel, but nevertheless, very excited to arrive to a 10-minute boat ride to the island.  Staff were efficient, warm, and great with the children and our luggage had moved from Male to island with little or no effort on our part allowing us to focus on the children.

The island is long and narrow so crossing over the width is a stone’s throw away, whilst the length is a good 15 – 20 minute walk but long enough to require buggys in the rain. The main arrival jetty is next to the infinity pool where most families gather after breakfast every morning either for a swim or a stroll on the beach.  The island’s sandy roads are beautifully manicured and well-kept in keeping with the paradise feel of the resort.    The island also has its own house reef located at one end of their water villas, and reefs sharks and turtles can be commonly spotted along the shallow waters as well as colourful reef fish.

Island fashion is relaxed and casual so bring only a pair of wedges and a dress for women and long trousers and shirts for men for the occasional date night at Fulhumaa Restaurant.  The guests at the hotel during our stay were a good mix from America, France, UK, Singapore, Taiwan, Hong Kong and China even in low season.

Rooms

We took a two bedroom beach villa with pool – we prefer this option to water villas because of the children’s safety plus our kids love to explore the sand for shells and crabs.  The rooms are extremely clean, with simple white tiles floors and Bali-styled teak furniture, very practical for children with no delicate or breakable tables or furniture.  Each room has a spacious bathroom with a large bathtub (on the water villas, this bathtub lays at the glass doors which can be opened for the perfect view), an indoor and outdoor shower which the kids enjoyed.  The rooms are simple, but more importantly, the rooms are well taken care.  The only way to describe the rooms is they are cleaned with ‘Singapore standards’ – a concept most people who have travelled to the Lion City would understand.  My children had room service on a couple of evenings and often food and sand would be evident on the floors.  During turn down service, the floors were back to their bright white colour and not a grain of sand could be found anywhere.  Laundry is quick too, and clothes can be usually returned to your room within a day.

Kids Club

The property does have a cosy temporary Kids’ Club whilst the island awaits for the construction of the larger and more permanent Kids’ Club to be completed later on this year.  The comfortable and clean converted room serves it purpose with tables for colouring and painting, board games and other toys.  More importantly, The Residence Maldives, creates a Kids’ Club all over the island.  The children’s daily activities are not restricted only to the Kids’ Club but they can range from crab hunting, baking cookies in the main pastry kitchen, BBQ with a professional chef, swimming activities at the main pool to make it fun for children of all ages.  My eldest is thrilled that at age 7 is now an expert crab catcher, a brilliant experience and at least I know that he can catch fish and crabs so he won’t go hungry on any island.

Paid Activities – Diving, Snorkelling, Dolphin and Fishing

My husband has been training our older three children, aged 7, 5 and 3, the last couple of months prior to our trip to ensure that snorkelling techniques were being refined before embarking for the best snorkel of the children’s lives.  We were so excited to take the children out to a large stunning reef that was only 10 minutes by boat.  The children were over the moon as they spotted reef sharks, leopard sharks, turtles, and several Nemos, of course.  Luca and Sofia, my elder two, still say today that ‘The best part about the hotel was the snorkelling and fishing.’

Also, surrounding the island are pods of dolphins, and it is possible to go out by boat to catch these incredible creatures who chase the boat to give you a spectacular show whilst they are hunting for their supper.  The dolphins are not always guaranteed but we were lucky enough to catch hundreds of them as soon as we set out.  Then, all by chance, whilst big-game fishing early in the morning we also caught sight of several more dolphins.

The diving is splendid as it one of the islands furthest south from the capital, Male, and it nests itself in one of the largest atolls in the world, The Gaafu Alifu Atoll.  The international dive team is extremely experienced and is headed up by French/American Master Diver, Nicholas.  He is cautious and safety is a priority for his team and guests.  You do feel safe in their care.  We saw leopard sharks, turtles, reef sharks and a family of eagle rays surfing though the channel.  Great visibility and possibly one of the best places in the world to dive.

Weather

The risk of travelling in low season (May – October) is possible monsoon rain but it never rains for long in the Maldives without gorgeous burst of sunshine.  Our risk paid off, and despite it being rainy season we had 5 glorious days of sunshine, and it only rained at night so I didn’t need my secret stash of children’s rainy day backup activities hidden in the suitcases.

Pricing

Often, price and budget has also stopped many families from taking holidays in the Maldives.  At many other five-star properties, paid activities are often unaffordable, like a fishing trip on other properties can cost up to USD1,000 whereas at the The Residence  works out at USD300 an hour.  Most five-star Maldives properties today are still very expensive and each day including activities and food can cost a further USD800-USD1000 a day.  The Residence Maldives has priced itself affordably which wins them most clientele to date.  Even, a massage at the spa only costs just over USD120 for 50 minutes, making you more willing to spend knowing it is value for money. For more information on the Spa by Clarins, click here.

Our family has been blessed to try out several other Maldives properties but as a family this is the one that we will come back to.
